Many of these dinners can be made up earlier in the week or the night before to make your life EASY!!! All use beef – either a roast (I use chuck roast) or ground beef.
KETO FAJITA PIE
Keto Pie Crust:
3 1/2 cups shredded mozzarella cheese
1 1/2 cups almond flour
1 teaspoon baking powder
1 teaspoon xanthan gum
Steak Fajita Filling:
2 tablespoons avocado oil
1 pound precooked or leftover steak or roast, diced into bite sized chunks
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1/4 yellow onion, sliced
4 ounces cream cheese, softened
1 1/2 cups shredded cheese
2 teaspoons taco seasoning
Preheat the oven to 400 degrees Fahrenheit (ca. 204 °C).
Start by making the Keto pie crust. Melt the mozzarella cheese using a microwave safe bowl in the microwave for 2 minutes or in a non-stick skillet over the stove top until melted.
To a food processor, add all ingredients. Pulse until combined and a dough ball forms. Place dough into between two pieces of parchment paper. Roll out dough into a circle until the diameter is 2 inches (ca. 5 cm) larger than your pie plate.
Remove the top layer of parchment paper. Place pie pan upside down on top the center of the pie crust. Flip upside down so the pie crust lands on top of the pie plate.
Press the pie dough into the pie pan. Get rid of excess if needed. Poke holes in the bottom of the crust. Bake in a 400-degree oven for 10 minutes.
While crust is baking, move on to making the fajita filling. Add avocado oil to a skillet. Heat over medium-high heat, then add bell pepper, onions and left over beef. Sauté until slightly softened. Remove from heat.
In a small bowl, add cream cheese, 1 cup (0.24 l) of cheese and taco seasoning. Cream together with an electric mixer.
Remove pie crust from the oven and decrease oven heat to 375 degrees. To the bottom of the pie crust, sprinkle 1/4 cup (0.95 l) shredded cheese. Using half of the mixture, drop dollops of the cream cheese mix over the base of the crust.
Add the steak and pepper mixture to the pie crust. Then add remaining cream cheese mixture. Top with remaining cheese. Bake at 375 degrees for 6-8 minutes or until the cheese is melted and bubbly.
Let it rest a least for 5 min and enjoy!
